Delicious and crispy Italian rice balls filled with creamy risotto and mozzarella cheese.

Ingredients

  • 2 cups cooked risotto
  • 1 cup mozzarella cheese, diced
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 cups breadcrumbs
  • 3 cups vegetable oil for frying
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder

Instructions

  1. Begin by shaping the cooked risotto into small balls, placing a cube of mozzarella in the center of each.
  2. Set up a breading station with flour, beaten eggs, and breadcrumbs.
  3. Dredge each risotto ball in flour, dip in the eggs, and coat with breadcrumbs.
  4. Heat the vegetable oil in a deep fryer or large pot.
  5. Fry the arancini in batches until golden brown, about 3-4 minutes each.
  6. Drain on paper towels and serve hot.

Notes

  • For a different flavor, add herbs like basil or parsley to the risotto.
  • Arancini can be made in advance and frozen before frying.
