- 2 cups cooked risotto
- 1 cup mozzarella cheese, diced
- 1 cup all-purpose flour
- 2 large eggs
- 2 cups breadcrumbs
- 3 cups vegetable oil for frying
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon garlic powder
- Begin by shaping the cooked risotto into small balls, placing a cube of mozzarella in the center of each.
- Set up a breading station with flour, beaten eggs, and breadcrumbs.
- Dredge each risotto ball in flour, dip in the eggs, and coat with breadcrumbs.
- Heat the vegetable oil in a deep fryer or large pot.
- Fry the arancini in batches until golden brown, about 3-4 minutes each.
- Drain on paper towels and serve hot.
