- 200 grams wild garlic
- 1 tablespoon butter
- 1 onion, chopped
- 2 potatoes, diced
- 1 liter vegetable broth
- 200 ml cream
- Salt to taste
- Pepper to taste
- Heat the butter in a pot over medium heat.
- Add the chopped onion and sauté until translucent.
- Add the diced potatoes and cook for a few minutes.
- Pour in the vegetable broth and bring to a boil.
- Lower the heat and let it simmer until the potatoes are tender.
- Add the wild garlic and cook for an additional 5 minutes.
- Puree the soup using an immersion blender.
- Stir in the cream and season with salt and pepper.
- Serve hot, garnished with extra wild garlic if desired.
Notes
- Wild garlic can be foraged in the spring, but ensure proper identification.
- This soup can also be made vegan by replacing cream with coconut milk.
- Serve with crusty bread for a complete meal.
