A delicious vegan version of the classic French dish, Boeuf Bourguignon, made with hearty vegetables and red wine.

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 cups mushrooms, sliced
  • 2 cups carrots, chopped
  • 2 cups potatoes, diced
  • 1 tablespoon tomato paste
  • 2 cups vegetable broth
  • 1 cup red wine
  • 1 teaspoon thyme
  • 1 teaspoon bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and garlic, sauté until translucent.
  3. Add mushrooms and cook until browned.
  4. Add carrots and potatoes, cooking for several minutes.
  5. Stir in tomato paste, followed by vegetable broth and red wine.
  6. Add thyme and bay leaf; bring to a boil.
  7. Reduce heat and simmer for 30-40 minutes until vegetables are tender.
  8. Season with salt and pepper to taste.
  9. Remove bay leaf before serving.

Notes

  • Serve with crusty bread for a hearty meal.
  • This dish tastes even better the next day after the flavors have melded.
