- 1 pound mixed dried fruit
- 1 pound marzipan
- 1 pound icing sugar
- 1/2 pound unsalted butter
- 1/2 pound brown sugar
- 6 large eggs
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon mixed spice powder
- 1/2 cup brandy
- Preheat your oven to 300°F (150°C).
- In a large bowl, cream together the butter and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the lemon juice and vanilla extract.
- In another bowl, sift together the flour, baking powder, and mixed spice powder.
- Gradually add the dry ingredients to the wet mixture, alternating with the brandy.
- Fold in the mixed dried fruit until evenly distributed.
- Pour the batter into a prepared cake tin.
- Bake for about 2 to 3 hours or until a skewer comes out clean.
- Let the cake cool before decorating with marzipan and icing.
