2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1 cup brown sugar, packed
1/4 cup granulated sugar
1 large egg
1 tablespoon vanilla extract
1/4 cup brewed espresso or strong coffee
1/4 cup molasses
1 cup chocolate chips
Instructions
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a bowl, whisk together the flour, baking soda, baking powder, spices, and salt.
In a separate large bowl, cream the butter and sugars until fluffy.
Beat in the egg, vanilla, espresso, and molasses until well combined.
Gradually add the dry ingredients and mix until just combined.
Fold in the chocolate chips.
Drop spoonfuls of dough onto the prepared baking sheet.
Bake for 10-12 minutes or until the edges are set.
Let cool on the baking sheet for a few minutes before transferring to a wire rack.
