Delicious and nutritious blueberry muffins that are a perfect healthy breakfast or snack option.

Ingredients

  • 1 1/2 cups whole wheat flour
  • 1/2 cup rolled oats
  • 1/2 cup unsweetened applesauce
  • 1/2 cup honey or maple syrup
  • 1/4 cup almond milk
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mix together flour, oats, baking powder, baking soda, and salt.
  3. In another bowl, combine applesauce, honey (or maple syrup), almond milk, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Fold in the blueberries gently.
  6. Scoop the batter into the prepared muffin tin, filling each cup about 3/4 full.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Let cool and enjoy!

Notes

  • These muffins can be frozen for up to 3 months.
  • Consider adding nuts or seeds for extra crunch.
