- 1 1/2 cups whole wheat flour
- 1/2 cup rolled oats
- 1/2 cup unsweetened applesauce
- 1/2 cup honey or maple syrup
- 1/4 cup almond milk
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
- Preheat oven to 350°F (175°C) and line a muffin tin with liners.
- In a large bowl, mix together flour, oats, baking powder, baking soda, and salt.
- In another bowl, combine applesauce, honey (or maple syrup), almond milk, and vanilla extract.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Fold in the blueberries gently.
- Scoop the batter into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Let cool and enjoy!
