- 1 pound flank steak
- 1 cup shredded cheese (cheddar or a blend)
- 4 large flour tortillas
- 1 tablespoon olive oil
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 tablespoon taco seasoning
- 1/2 cup sour cream
- 1/2 cup salsa
- Preheat the Blackstone griddle over medium-high heat.
- Season the flank steak with taco seasoning, then cook on the griddle for about 4-5 minutes per side until cooked to your liking.
- Remove the steak from the griddle and let it rest for a few minutes before slicing it thinly.
- In a separate area of the griddle, add olive oil, onions, and bell peppers. Sauté until softened.
- Assemble the quesadillas by placing cheese, steak, sautéed onions, and peppers on half of each tortilla. Fold the other half over.
- Cook the quesadillas on the griddle until the tortillas are golden brown and the cheese has melted, about 2-3 minutes per side.
- Cut into wedges and serve with sour cream and salsa.
