Tiropitakia Kourou are delicious Greek cheese pastries made with flaky pastry and stuffed with a variety of cheeses. Perfect as an appetizer or snack!

- 1 package phyllo pastry
- 500 grams feta cheese
- 200 grams ricotta cheese
- 1 egg
- 50 grams butter, melted
- 1 teaspoon salt
- 1 teaspoon black pepper
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine the feta, ricotta, egg, salt, and pepper.
- Lay out a sheet of phyllo pastry and brush with melted butter.
- Place a spoonful of the cheese mixture on one end of the phyllo and fold into a triangle, sealing the edges.
- Repeat until all the filling is used.
- Place the triangles on a baking sheet and brush with more melted butter.
- Bake for 25-30 minutes until golden brown.
Notes
- Serve warm with a side of tzatziki.
- These pastries freeze well before baking; just thaw and bake when ready to enjoy.
