A delicious treat that combines a rich chocolate brownie with creamy peppermint frosting and a layer of chocolate ganache.

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup powdered sugar
  • 1/4 cup heavy cream
  • 1/2 teaspoon peppermint extract
  • 8 ounces semi-sweet chocolate, chopped

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. In a saucepan, melt the butter over low heat. Stir in the sugar, eggs, and vanilla until smooth.
  3. In a separate bowl, combine the flour, cocoa powder, baking powder, and salt. Gradually mix the dry ingredients into the wet ingredients until combined.
  4. Pour the brownie batter into the prepared pan and spread evenly. Bake for 25-30 minutes until a toothpick comes out clean.
  5. For the frosting, beat the powdered sugar, heavy cream, and peppermint extract until smooth. Spread over the cooled brownies.
  6. For the ganache, melt the chopped chocolate in a bowl over simmering water, stirring until smooth. Pour over the frosting layer and let set.
  7. Cut into squares and serve chilled or at room temperature.

Notes

  • For a stronger peppermint flavor, increase the peppermint extract in the frosting.
  • Store in an airtight container in the refrigerator for up to one week.
