- 2 cups white beans, soaked overnight
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 bay leaf
- salt and pepper to taste
- Drain and rinse the soaked beans.
- In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery. Cook until softened.
- Add the drained beans, vegetable broth, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for about 1 hour, or until beans are tender.
- Remove bay leaf. Use an immersion blender to puree the soup to your desired consistency.
- Season with salt and pepper. Serve hot.
Notes
- For extra flavor, add smoked paprika or diced ham.
- Can be stored in the refrigerator for up to 5 days.
