A creamy and hearty white bean soup, perfect for a comforting meal.

Ingredients

  • 2 cups white beans, soaked overnight
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • salt and pepper to taste

Instructions

  1. Drain and rinse the soaked beans.
  2. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery. Cook until softened.
  3. Add the drained beans, vegetable broth, thyme, and bay leaf.
  4. Bring to a boil, then reduce heat and simmer for about 1 hour, or until beans are tender.
  5. Remove bay leaf. Use an immersion blender to puree the soup to your desired consistency.
  6. Season with salt and pepper. Serve hot.

Notes

  • For extra flavor, add smoked paprika or diced ham.
  • Can be stored in the refrigerator for up to 5 days.
